One of our favorite soups is this Rio Chirripo Vegan Potato Leek Soup. It is very hearty and filling enough to make a light dinner, especially when paired with multigrain bread. 


Potato Leek Soup

Ingredients
1 tbsp vegetable oil
1tbsp coconut oil
1 medium onion, diced
2 garlic cloves, finely chopped
1 sprig thyme
1 large leek
½ kilo of potatoes
½ cup wine
2 liters water
1 can coconut milk
Salt and pepper

Instructions
Peel and cut the potatoes.
Cook in salt water until soft.
Fry the onions, garlic, and leek with thyme until soft.
Add wine and cook until reduced to half. 
Add potatoes and water.
Cook slowly for 30 minutes. 
Add coconut milk, salt, and pepper. 
Serve and enjoy.

Following a gluten free diet is usually based in gluten intolerances like Celiac disease or gluten allergy. Some people also choose to follow a gluten free diet because they enjoy how it makes them feel – lighter and less weighed down by carbohydrates. Keto, short for Ketosis, is a diet based on a high-protein, low-carbohydrate intake that can help with certain medical conditions. Both of these diets avoid most grains – such as wheat – and therefore require bread substitutions. We recently hosted an amazing retreat group who followed the Keto diet and they raved about the cuisine at Rio Chirripo lodge during their event, saying it was some of the best Keto food they’d ever tasted!

This recipe is a delightful Keto dessert and super easy to make. Enjoy creating a Rio specialty in your own kitchen!


Macadamia Bars

Ingredients
4 oz of macadamia nuts
½ cup of coconut oil
40 drops of cane sugar
½ tbsp of unsweetened shredded coconut

Instructions
Thoroughly chop the macadamia nuts in a blender or chopper. 
Add coconut oil and shredded coconut to a bowl and mix thoroughly.
Mix in the macadamia nuts and cane sugar.
Line 9×9 baking dish with parchment paper.
Pour batter in and refrigerate overnight.
Cut into pieces and serve.
For crunchier bars, store them in the freezer.
